The quest for perfection that Robert Entenmann fought so hard for in the bakery is also apparent in his vineyards. The use of a state of the art laser planter helped to achieve this goal by measuring exactly where the vines should be planted by laser beam. There are only a handful of these engineering marvels in the state of New York. We continue to plant for prospective vineyard owners in the area. In the bakery, there are well over one hundred different types of baked goods made based upon variables like regional popularity. Robert learned over the years which products fared the best through trial and error. His efforts in the vineyard are undergoing the same meticulous process, however it's a bit more complex. Vineyard Selection is achieved by choosing grape varietals; where and how to plant and to eventually maintain the vines, keeping our weather and soil conditions in mind. Since our maritime climate is quite similar to that of the Bordeaux region of France, we studied their methods for inspiration. We feel this medium density planting strategy will allow for more intensity of flavor in our fruit. Sixty-five per cent of our vineyards are primarily Merlot and other red Bordeaux varieties including Cabernet Franc, Cabernet Sauvignon, Malbec, Petit Verdot, Pinot Noir and Syrah. Our main white variety is Chardonnay, with additional plantings of Gewürztraminer, Riesling, Sauvignon Blanc, Semillon, Pinot Grigio and Viognier.
